N'Awlins Barbeque Prawns

INGREDIENTS 

  • 6 tablespoons unsalted butter
  • 2 teaspoons minced garlic
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons finely chopped fresh thyme
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon turmeric
  • 650g large green prawns (in their shells)

METHOD
  • In a small sauté pan over medium heat, melt the butter. Add the garlic and cook, stirring occasionally, until soft, 2 to 3 minutes.
  • Remove from the heat and add the remaining marinade ingredients. Stir and allow to cool to room temperature.
  • Using a sharp knife, split open the back of each prawns and devein it. Place the prawns in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for 20 to 30 minutes.
  • Remove the prawns from the bag and discard the marinade. Grill in your Weber over direct high heat (230°C to 280°C), with the lid closed as much as possible, until the prawns are just opaque in the center and firm to the touch, 2 to 4 minutes, turning once. Remove from the grill and serve warm or at room temperature with rice, if desired.



Easter Recipe Grilled Salmon and Chipotle Sauce

INGREDIENTS

  • 2 tablespoons extra virgin olive oil
  • 1/2 cup finely chopped red onion
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 can (790g) whole tomatoes
  • 1 canned chipotle chile in adobo sauce
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon finely chopped black pepper
  • 4 salmon fillets (with skin), 170g to 225g each and about 2.5cm thick
  • Extra virgin olive oil
  • Salt
  • Freshly ground black pepper
METHOD
  • In a medium saucepan over medium-high heat, warm the oil. Add the onion and cook until soft, 4 to 5 minutes, stirring occasionally. Add the garlic and oregano and cook until the garlic is light brown, about 1 minute, stirring occasionally. Add the tomatoes with the juice and the chile. Season with the sugar, salt, and pepper. Bring the sauce to a boil, then lower the heat to a simmer. Cook for 30 to 40 minutes, stirring occasionally and crushing the tomatoes with the back of a large spoon as they soften.
  • Carefully pour the sauce into a food processor. Puree and return to the pan. Keep warm over low heat.
  • Generously brush or spray the fillets with oil and season with salt and pepper to taste. Grill, flesh side down, over direct high heat (230°C to 280°C), with the lid closed as much as possible, until you can lift the fillets off the grate with tongs without sticking, 6 to 8 minutes. Turn the fillets and finish cooking them to desired doneness, 2 to 3 minutes for medium rare. Slip a spatula between the skin and flesh, and transfer the fillets to serving plates. Serve warm with the sauce and serve with cous cous or quinoa.

Evaporative cooling is a great way to cool any space. The technology behind it is very simple but delivers great results. Here we will demonstrate who it works in 3 simple steps.

1. Warm outside air is drawn into the evaporative cooler through wet filter pads by the ventilation fan.

2. The warm air passing through the wet filter pads makes the water evaporate. The heat needed to cause the evaporation is expelled, creating cooler air.

3. The ventilation fan then directs the cool air through to the areas being cooled.

This system works similarly to how the human body regulates temperature. If the human body is too hot it will perspire to create moisture on the skin. As air passes along the perspiration it evaporates, cools the skin and helps to lower the overall body temperature.

Warm air drawn into wet filter pads evaporates the water. If all the water evaporates then there is no way to cool the air. That’s why all evaporative coolers have pumps that continually draw water to wet the filter pads from the top down.

Unfortunately evaporative coolers can’t be used everywhere. Most of Australia is perfect for evaporative cooling except for the top end of Australia where there are high temperatures along with high to extreme levels of humidity at the same time. It’s a big financial decision so you’ll want to get it right, so let’s take a look at both systems which may help you to decide.

Starting with the very basic differences evaporative systems cool only where as reverse cycle will both heat and cool. However you can combine gas ducted heating with evaporative cooling to warm you home which will give you the best of both worlds.

Evaporative cooling system works by drawing the warm air through water soaked pads thus cooling the air. This method works particularly well in drier climates like Western Australian and South Australia.

As they only require power to run the pump and a fan their running costs can be the equivalent as running a light globe. They are by far a less complex system to build and therefore cheaper to buy. The average purchase price and installation cost is roughly half that of a reverse cycle unit. In addition they are easy to maintain and repair and far more environmentally friendlier.

Reverse cycle air conditioning cools or heats the air inside the home and then recycles the air inside the house through a filter called the return air vent. For efficiency it’s best to keep all your external windows and door closed, that way you are not having to cool down or heat up air from outside.
With evaporative cooling you need to leave a window or screen door open to expel the warm air from the home and prevent a build up of moisture.

Certainly there are those who feel the constantly changing air is a good thing while others who suffer from hay fever and allergies might feel that recycling filtered air is better.

Reverse Cycle air conditioning work well in both dry and humid conditions. While they cost more purchase and install they do offer the convenience of both heating and cooling from one unit. It also means just one lot ductwork and grills. Another advantage of reverse cycle is that you can zone parts of the home so that you only cool or heat the parts you are using at the time.
